We’re a month out from our season opener at Pegasus! I know there are a bunch of people camping, so lets plan on a Saturday night cookout. Who’s up for it.

Its the left side shoulder of the pig. Since most pigs are right handed, the left shoulder does less work, and tends to be more tender than the right side shoulder. BigGrin

Either that, or its a gross inattention to detail on the part of the person posting that heinous error!

It's the uphill side on pigs raised in WV. ..legs are shorter but more tender.
